Toss Out The Salad

If you have turned on the news, scrolled through twitter, or even hopped on instagram you have probably seen that their has been a recall and recommendation to throw out all of your Romaine Lettuce! The Center For Disease Control has issues a recall for this particular leafy green due to E.Coli that has been found in 11 states at this point. Here are my thoughts on the outbreak and how I'm handling it properly with the upcoming Thanksgiving Feast.

First off, I trust the CDC. Have you ever watched CSI, Blue Bloods, or Law and Order? Those detective shows are Adam and I's favorite. We love trying to solve the mystery or guess the next move. The CDC has detectives of their own who find and solve the mysteries behind contaminated foods and food  borne illnesses. It is a fascinating process. We had a family friend who contracted Hepatitis and went into liver failure. The CDC traced it back to a sandwich shop and to a singular employee! I do not lose faith in the produce department because I also make sure that I personally am practicing food safety in our home.
 
Follow these 4 simple food safety rules to keep you and your family safe: 
1. CLEAN - wash your hands, surfaces, and fresh produce
2. SEPARATE - do not cross contaminate using the same cutting board, same knives, or same plate to transport different foods
3. COOK - Cook your foods to the correct temperature.
4. CHILL - Refrigerate promptly. Food should only be left out for 2 hours.

Finally do your part to help the CDC keep us safe. If you believe that you are suffering from a foodborne illness, call it in (to the tip line) at 1-888-SAFEFOOD.

It is important that we throw out our romaine lettuce, per the CDC's request, which to be honest is a little bit of a frightening thought with Thanksgiving being tomorrow. So here are some lettuce free salad recipes to add to your table this Thanksgiving.

Morrocan Carrot Salad 
 4 cups grated carrots
2 cans drained great white northern beans
7 chopped dates
4 chopped scallions
1/4 cup diced red onion
1 cup chopped cilantro Combine all these together in a large mixing bowl. 


And in a smaller bowl mix together the dressing of
3 tbsp olive oil
2 limes juiced and zested
1 tsp cumin
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp pepper
Add and toss until completely coated and then finish with
1/2 cup pepitas
1 container of feta cheese
