Cult Following Corn Salad



One thing I have in common with the cattle on the feedlot is my love of eating corn 🌽. A corn salad is something I always have out on the summer dinner table. Here is a quick corn salad recipe highlight my herb garden.
6 ears charred sweet corn (I just throw them under the broiler until they start to brown slightly) removed from the cob
2 green onions
1/4 cup red onion diced
1 container of crumbled feta
2 tbsp olive oil
1/2 tsp lemon zest and juice of half a lemon
1/4 cup basil and mint
Salt and pepper to taste
