Homemade Hummus

Hummus is so easy to make and a great thing to have in the fridge for fast healthy snacks or as an addition to a sandwich or wrap! Add this recipe to your meal prep this week.
 


Homemade Hummus
2 cans chickpeas, drained
1 tsp salt
1/2 tsp pepper
1/2 lemon juiced or 1 1/2 tsp apple cider vinegar
1 tbsp garlic, minced
1/4 cup olive oil + more I’d needed

Add chickpeas to a food processor with salt, pepper, and garlic. Add lemon juice (or vinegar). Pulse 5 times. Turn on processor to high and slowly pour in olive oil until it reaches a smooth creamy consistency. 

For Roasted Red Pepper Hummus: add 1 cup roasted red pepper. 
For Pesto Hummus: add 1-2 tbsp pesto in place of garlic
For Sun Dried Tomato Hummus: use oil from sun dried tomato jar with 2 halves of sun dried tomatoes.

Serve with vegetables, on a salad, or in a wrap!
