Undeniably Dairy Experience: Clear Creek Organic Farms

I have received a Mini Grant from Midwest Dairy to provide an #undeniablydairyexperience! I want to shed light on the dairy industry and the nutritional benefits of consuming dairy products. To do this, I plan to visit local dairies, purchase dairy products, and then create recipe highlighting dairy.

My first stop on the #undeniablydairyexperience was Clear Creek Organic Farms in Spalding, Nebraska. This diversified organic farm specializes in dairy products, made on sight, pork, and an array of organic vegetables.

I had such a great time visiting with owners, Bob and Kristine Bernt. They gave me a tour of the processing facility as well as a glimpse into the cooler that was filled with their cheeses. They said that the garlic parsley is without a doubt a best seller.

The milk they produce also helps serve their pork and vegetables as well. The leftover whey is given to their pork and raw milk is used to fertilize their vegetables. Bob even had a study done with Nebraska Extension which proved that raw milk was increasing his yields.

"Milk is the perfect food." Bob said. It is true that in a single glass of milk you find 9 vital nutrients needed for optimal health.

I ended the tour by getting my hands on some of their fresh cheese, cultured butter, and homemade breakfast sausage.

For the first recipe of the #undeniablydairyexperience, I wanted to use cheese. Their is a stigma that surrounds cheese that it is high calorie, high fat, and is not apart of a nutritious diet. Cheese is loaded with nutrition and contains impressive amounts of calcium, protein, phosphorus, zinc, vitamin A, and vitamin B12. If you are lactose intolerant, you can also still enjoy certain kinds of cheeses! Cheddar and other aged cheeses have little to no lactose in them.

These cheddar broccoli egg muffins were inspired by heading back to school. Loaded with protein, dairy, and vegetables they are the perfect grab and go breakfast for adults and kids alike!

Cheddar Broccoli Egg Muffins
6 eggs, whisked
2 tbsp milk
1/2 tsp salt
1/2 tsp pepper
1 cup low fat shredded, cheddar cheese
1 cup chopped broccoli florets

Preheat oven to 375. Whisk together eggs, milk, salt, and pepper. Add cheese and broccoli. Divide evenly among greased muffin tins. Bake 18-20 min or until set. Serve with fresh fruit for a balanced breakfast.
