Mango Cake

I taught my 8th Multi-Cooker recipe this week! I have so loved having the chance to teach so many people how to cook with pressure to get nutritious meals ready for their family, faster. This class we made a variety of meals that highlight all that spring has to offer including this Mango Cake.




Mango Cake
3/4 cup flour
1/2 cup sugar
1/4 cup plain Greek yogurt
1/4 cup oil
1/3 cup mango purée (I made this by letting frozen mango get to room temp and then pureeing in a blender)
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Grease baking pan and set aside. Mix together all wet ingredients in one bowl. In another bowl combine all dry ingredients. Combine together and mix until just combined. Pour into greased baking dish. Pour 2 cups water into liner and place in steam rack. Place baking dish on top. Lock lid in place and cook on low pressure for 25 min followed by a natural release. Serve with fresh fruit.
