Come To The Table

Did you know my mom made us eat dinner together every single night growing up? Sometimes that meant not even eating until 9:30pm because of schedules and meetings. As much as I complained about eating so late, my mom was truly on to something about forcing us to sit down and share a meal every night.

The American Academy of Pediatrics shared that children who regularly dine as a family do better in school due to an extended vocabulary, have an overall better diet quality, and are shown to have a better body image. It goes on to say that children who regularly come to the table for family dinners are 35% less likely to have disordered eating patterns.

Although the benefits of dining together are there, it still can be a challenge to get a meal on the table and everyone sitting down to eat it. Time, schedules, and food prep are 3 main hindrances that have led to a 30% decline in family dinners consumed. To help more families eat together, I’m going to try and share a couple 30 min meals that are perfect when in a time crunch!

20 Minute Salmon
1 piece fresh salmon
Olive oil
Seasoning of choice, sriracha, or teriyaki sauce

Line baking sheet with parchment or foil and place salmon on top. Pat dry with paper towels. If using sriracha or teriyaki carefully coat the fish. If using a seasoning, drizzle with olive oil and season generously. Place baking sheet in a COLD oven. Then preheat oven to 425 and set the timer for 20 min. Remove salmon when timer goes off, NOT when the oven preheats.
Serve with brown rice and a steamed vegetable and you’ve got a meal!
