Applesauce Baked Oatmeal
I swear if I have to
shovel my driveway one more time, I quit! Charlotte and I actually had a
pretty productive snowed in weekend. We organized a lot of cupboards
and also spent a lot of time in the kitchen! Halfway through baked
oatmeal, we ran out of eggs so we made a quick switch and we have a new
favorite version of one of our favorite breakfasts! This was also a great reminder that if you know or a have a loved one with an egg allergy, it doesn't have to hold you back from enjoying a variety of baked goods with these egg alternatives.
1 egg can be replaced by using 1/3 cup applesauce in sweeter dishes like baked oatmeal, brownies, or muffins
1 egg can be replaced by using 1 tbsp ground flax mixed with 3 tbsp water for a flavorless substitute that could be added into meatballs, cookies or granola bars.
Applesauce Baked Oatmeal
3.5 cups oats
2/3 cup sugar
1/2 cup oil
1 cup milk
1/2 tsp salt
2 tsp baking powder
3 tbsp flax seed
1/2 cup applesauce
1 tsp cinnamon
Mix all ingredients together and bake in 8x8 dish or 8 in pie plate at 350 for 30 min.
