Instant Pot Salmon & Mashed Potatoes with Greens

Would you believe me if I told you I made all of this in my instant pot in 3 min?! Because I did. Also an easy way to sneak another serving of veggies in your meal is to add a handful of leafy greens (spinach, kale, arugula) to your mashed potatoes. 


Instant Pot Salmon & Mashed Potatoes with Greens


1. Coat 4, 6oz, skin on salmon filets in 1 tsp salt, 1-2 tsp pepper, 1/2 tsp paprika, and 1 tsp lemon zest

2. Wash, halve, and quarter 1.5lb baby red potatoes. Layer potatoes in bottom of instant pot with 1 cup water, 1/2 tsp salt, and 2 tbsp butter. 
3. Place salmon in an even layer in the steam rack insert and set on top of potatoes. 
4. Lock lid in place and cook on high pressure for 3 min followed by a quick release. 
5. Remove salmon and set aside. 
6. If potatoes are soft, remove some of the liquid and mash potatoes and fold in your greens. If not quite done, set instant pot to sauté setting and cook until potatoes and soft and mashable.
