12 Days of Christmas Recipes: December 19th
It
was our Courthouse Christmas Potluck this afternoon so what a great
time to make another marinated salad- winter edition! With lots of
seasonal produce, this was an absolute hit and would be perfect at any
holiday table.
Squash and Arugula Cous Cous Salad
1 package Israeli cous-cous or harvest grain blend from Trader Joes
(orzo pasta would also work or even quinoa)
1 medium butternut squash cubed and roasted
4 cups arugula
1 cup feta
1 cup pomegranate seeds
1/4 vinaigrette
(I just used a light vinaigrette that I had on hand, but if I had more time I would have made a homemade one with orange juice and olive oil)
Salt and Pepper
Cook cous-cous or grain blend according to package. Once cooked transfer to large mixing bowl and toss with olive oil. Add roasted squash, arugula, pomegranate seeds, feta, and dressing. Toss until completely combined. Season with salt and pepper to taste.
