Roasted Chickpeas & Walnuts
Adam loves to snack. I mean really loves it. He turned 30 this past year and I said I could make anything he wanted to bring to bowling. I threw out options like a taco bar, pulled pork, french dips, chicken wings. His choice - a snack bar. I mean this kid is serious in terms of his snacking. I've learned that marriage is all about compromise so I have learned how to stock our cupboards with snacks that are both Adam and Hannah approved. Here’s a healthy snack mix full of
fiber, protein, and healthy fats so adam can keep snacking and his wife
can quit nagging.
2 cans rinsed, dried chickpeas
1 bag walnut halves, the medium size bag
2 tbsp olive oil
I tsp salt
1/2 tsp pepper
1/2 tsp garlic salt
1/2 tsp dried parsley
Toss chickpeas in olive oil, salt, pepper, and garlic powder. Lay on lined baking sheet and bake at 375 for 18 min. In the same bowl that you tossed the chickpeas, toss the walnuts. Add to chick peas and roast for an additional 15 min. Sprinkle with parsley for a little bit of green.
