Bacon Opie-Meal
In our house we call it “bacon opie-meal” ,
but really it’s baked oatmeal. Charlotte has been eating it since she was a toddler and never could quite say baked oatmeal so "bacon opie -meal" it was and has been ever since. It’s always on my moms menu when company
is in town and I’ve made a few changes and it’s becoming a staple in our
house as well but will forever be referred to as "bacon opie-meal" because frankly it breaks my heart that Charlotte might realize it's actually baked oatmeal and start calling it by it's real name. I'm still recovering from the fact she learned how to say granola bars...Hey Charlotte, stop growing. But this recipe is an absolute winner and a great way for me to sneak in flax seed, sunflower seeds, and loads of fiber into Charlotte and Adam. It serves as the perfect Sunday breakfast or after school snack.
Baked Oatmeal or Bacon Opiemeal
3.5 cups oats
3/4 cup sugar
1/2 cup oil or butter
1 cup milk
2 eggs
1/2 tsp salt
2 tsp baking powder
3 tbsp flax seed
1/4 cup sunflower seeds
1/2 cup mini chocolate chips
Mix all ingredients together and bake in an 8x8 pan or 8in pie dish at 350 for 30 min. Double the recipe to fill a 9x13 to feed a bigger crowd.
