Lunchbox #4
Dear Lunchbunch followers,
That is what I am going to refer to my faithful followers of this lunchbox journey. It has been awhile since I packed a lunch because the school has been killing it with their lunch menu. Pork carnitas, Mini Corndogs, and Chicken Patty on a bun! I mean let's be honest I can't compete with that!
Charlotte asked if I would make her lunch today and to be honest, that is what I'm going for in terms of making her lunch. It's not going to be everyday and there are going to be some mornings that I'm not going have time, but if she wants a change of pace and to bring her lunch - I can make that happen.
Today, she got my rendition of a lunch she frequently asks to purchase at the store but with a homemade, and healthy twist.
1. Whole wheat crackers - I want Charlotte to have a slow release of energy from her lunch and the complex carbohydrates in whole grains are going to be the best choice.
2. 4 slices of deli turkey - I highly recommend getting your turkey from the deli and the oven baked option. The packaged deli meat is loaded with sodium and water. The baked, deli version is the simpler ingredient, lower sodium option. Also, feel free to ask your butcher for it super thin, super thick, or somewhere in between.
3. Cut up String Cheese - I cut some string cheese in half to make a little more manageable. This is also a simple way to incorporate an ingredient I had on hand. If you have sliced cheese, have fun cutting out circles, squares, and other shapes.
4. Clementine - So normally, I would never allow meat to touch fresh produce but that clementine has been washed and the skin will be removed before eating. So many food safety boxes have been checked.
5. Sugar Snap Peas - I will be honest Charlotte will most likely eat one of these. She knows I'm going to ask if she ate something green, she knows the routine in our house is to eat a green thing at a meal, and you know even if she eats just one I am proud of her of making an effort to try to eat more green things.
6. Yogurt - no explanation other than the fact that my child's spirit animal is a bucket calf and she will eat any and all dairy products
