Food In the Field: Pork Carnitas
I got put on my first ever harvest lunch duty for
all the guys this weekend. Rules were as follows: has to be portable,
has to taste good, has to have veggies and whole grains (ok that was my
rule).
farmer/ harvest approved pork carnitas 🌯🚜🌽
4lb pork butt or
shoulder
1 tsp salt
1 tbsp oregano
1 tbsp cumin
1 large onion, cut into wedges
2tbsp garlic
1 lime juiced
1 cup OJ
1 cup stock
Add all ingredients into a crockpot and cook on high for 4-6 hours or low for 8-10 hours.
Remove and shred and add back in 1 cup of cooking liquid.
When ready to cook spread meat over baking sheet and cook for 10min at 375 until edges crisp.
On a whole wheat tortilla, put a layer of Romaine leaves so prevent tortilla from getting soggy.
Layer on meat, cojita cheese, and some fresh pico de Gallo.
Roll up in foil and pack it up for the field!
