Chickpea Salad


This is one of those recipes that I 100% threw together in a time of desperation and that has now become a staple in our family. It is crazy simple, nutritious, and you without fail will have someone ask your for the recipe. I'm embarrassed when I explain how easy it is but alas I reveal my secrets. 
1 can of chickpeas or any white bean
1 can of SOLID WHITE ALBACORE tuna
(solid white albacore is key, yes it is a little more expensive but it's worth it, there is no fishy taste and it will change the way you see/eat/smell tuna)
1/2 diced onion, red or white
1 bunch of cilantro, chopped
(Ask before serving guests cilantro. Did you know it is a gene that determines whether you like or dislike cilantro? So make sure to ask and just know its not their fault)
Tomatoes, as many or as few as you like and any kind will work
Drizzle with Olive Oil, lemon
Season with Salt and pepper
